Zelko Bistro is owned by two exceptional young women - from two exceptionally different backgrounds. One of these women is Chef Zelko, a native Houstonian with a belief in true community, visions her concept through pourposing forward and perserveres her commitment with obtaining the details in her products. Partnered in this venture is Dalia Zelko, a native of Mexico, who now describes herself as a Houstonian through and through.
Being a Chef led restaurant, Zelko has materialized a concept in ZB that has become a Houston favorite for the past few years. Dalia executes this concept through daily operations and creative steering. Both women share the vision the common goal of Quality Products, Service, Exceptional Standards and especially so, the insatiable hunger for Social Impact and Responsibility.

Chef Zelko, is a culinary advocate that focuses on creating delicious, sustainable, organic and locally resourced cuisine she calls “New American Comfort”. A native Houstonian, and ―All American Girl‖, barely 30 years of age, has made her way through the restaurant scene for 15 years and created the intimate atmosphere at Zelko Bistro in the Heights - a now favorite by locals, critics and chefs alike - the 1920s bungalow was sustainably remodeled and retro-fitted with salvaged antiques.
Zelko is also a strong advocate for conservation responsibility. She encourages people to become more aware of the ecosystems and agriculture surrounding them and to make the kind of positive food choices that encourage growth in those areas.
Earning many accolades througout her young life, such as: Texas’ “Best Up-and-Coming,” Star Chef-Sustainable Chef” for 2010 from StarChefs.com, recently featured on Food Network, and recently named Sustainable Restaurateur by H Magazine, Chef Zelko is proud to have shared the culinary scene with the best chefs in Houston.

Dalia comes from a corporate business background in chemistry
& holds several patents under her belt and marketed these new developments internationally as well as spear-headed their production.
Leading a team in global customer service, maintaining a $300 Milliion business requiring international travel that took her to over 20 countries, Dalias multi-cultural experience is invaluable to Zelko Bistros core standards of outstanding service.
Chosing to venture her independence and join the concept of Zelko, devoting her experience to a greater purpose. by giving back to the community, Dalia helped Chef Jamie Zelko make the dream of Zelko Bistro become a reality.
Dalia holds advanced degrees in Natural Science, & Business Administration and certifications in Employee Development, Project Management, numerous times recognized for her academic achievement including a Distinguished fellowship award - to attend graduate school.
